Autumn Kale Salad with Cider Vinaigrette

Even my non-salad eating guys friends like this salad…

I made this for a pizza night recently and it all got eaten. It is a super easy salad to make with not too many veggies to chop, and it will be delicious even when the weather starts to get cold and produce isn’t as tasty.

Ingredients
  1. 1/3 cup apple cider vinegar
  2. 3 Tbsp olive oil
  3. 1 Tbsp honey
  4. salt and pepper to taste
  5. 1/2 cup (or more if you like) finely sliced red onion
  6. 10 oz kale, stems removed and roughly chopped (about 10 cups give or take)
  7. 2 cups grated carrot
  8. 2 cups grated carrot
  9. 1/2 cup of each: dried cranberries, sunflower seeds, sliced and toasted almonds, crumbled feta cheese
Instructions
  1. In a large bowl whisk together vinegar, olive oil, honey and salt and pepper.
  2. Add onions and let sit 10-15 mins.
  3. Add kale and massage with dressing using your hands until it starts to wilt a little (see picture).
  4. Add carrots and rest of dry ingredients. Toss together and enjoy!
Notes
  1. Can sit in fridge for about an hour or two, but much longer and it gets a little too wilted and soft.
