Vegan Date Shake

A year or two ago we went to a wedding in Palm Springs. It was one of the hottest days of the year but it was the most gorgeous wedding I’ve ever been to. There was pre-wedding swimming, post-wedding swimming, and our dog running through the reception. Truly epic!

I had my first date shake that weekend, which is one of the things Palm Springs is known well for. Here is my vegan re-creation of that magnificent shake. If you wanted to un-veganize it, it would be easy to just add a scoop or two of premium vanilla ice cream in the place of bananas.

Ingredients
  1. 4 dates, pitted
  2. 1/2 cup almond milk
  3. 2 frozen bananas
  4. 2 Tbsp chopped walnuts
  5. pinch of cinnamon
Instructions
  1. Soak dates in almond milk for at least 30 mins.
  2. Blend together soaked dates and remaining ingredients until smooth. Enjoy right away!
Notes
  1. My Vitamix is fairly powerful so I don't really need a lot of liquid to blend the frozen bananas, but if you have a different blender and need to add more liquid go for it!
