Sometimes the simplest recipes are the best. I cook my broccolini this way all the time. It is done from start to finish in just under 15 minutes and is the easiest side to literally anything, or a perfect topping for pasta. The little leaves on the broccolini get nice and crispy and there’s a nutty flavor accented with a hint of lemon.
- 1/2 lb broccolini
- zest of one lemon
- 1/2 tsp kosher salt
- 1/4 tsp fresh ground black pepper
- 1-2 Tbsp olive oil
- Preheat oven to 400 degrees.
- Line a baking sheet with parchment paper. Combine ingredients using hands on the parchment paper.
- Roast for 10 mins (season if need be) and enjoy!
