The Ultimate Salad

This is the salad you should be making every week. Here’s why:

  • It stays good in your fridge all week.
  • It is a perfect desk lunch. 
  • The ingredients are not expensive. 
  • It holds up to pretty much any dressing you put on it.

And the main reason I make this salad every week is because you can make it into sixteen (yes, sixteen) other types of salads,  tacos or spring rolls. I usually make a huge bowl at the beginning of the week and then make different dinners with the same “base.”

Makes 16 different salads with the same base salad.

Ingredients
  • 1 small head of purple cabbage, chopped thin about 5-6 cups
  • 1 small head of green cabbage, chopped thin about 5-6 cups
  • 4 cups shredded carrot
  • 1.5 cups chopped cilantro
  • 8 green onions, chopped
  • 1 english cucumber, chopped
Instructions
  1. Toss together ingredients, cover, and set in fridge for up to a week.
