The Ultimate Salad
This is the salad you should be making every week. Here’s why:
- It stays good in your fridge all week.
- It is a perfect desk lunch.
- The ingredients are not expensive.
- It holds up to pretty much any dressing you put on it.
And the main reason I make this salad every week is because you can make it into sixteen (yes, sixteen) other types of salads, tacos or spring rolls. I usually make a huge bowl at the beginning of the week and then make different dinners with the same “base.”
You can make all these recipes with this same recipe (or just improvise!):
- Taco Salad
- using this Turkey Taco Meat
- or this Grilled Taco Chicken
- and this Dressing.
- Chopped Crunchy Asian Salad
- using this Sesame Ginger Dressing
- and this Lemongrass Grilled Chicken
- California Summer Salad
- California Chopped Salad with Grilled Corn
- Chopped Salad with Crispy Wonton Strips and Peanut Dressing
- Side Slaw
- Spring Roll Salad
- Summer Slaw with Spicy Nuts and Seeds
- Super Slaw(Mayo Free)
- Veggie Spring Rolls with Crispy Tofu
- Blackened Fish Tacos
- Crispy Chickpea Tacos

Nice!!! Can use any dressing with it and it’s just a nice side salad. Or can use it on sandwiches or tacos… pretty versatile! Let me know how it goes!

It was great, although I made too much, even with leftovers. People loved it and especially loved the Sesame Ginger Dressing. I also made your Easy Chickpea Salad and the Toum, which was popular although one person accidentally slathered it on her crostini without realizing its potency. Oops. I loved the toum and some homemade guac on a crostini – so good.
