In a high powered blender or food processor combine avocado, garlic, lemon, olive oil, vinegar, parsley green onions and salt. Blend until smooth and herbs are finely chopped and incorporated.
Add chives and other herbs of choice to blender, and blend again quickly until incorporated. Taste and season with salt if necessary, adjust with more lemon or vinegar if the dressing is too thick.
To use this is as a dip reduce the amount of vinegar, and to make it non-vegan add an anchovy in the first step.
