Shredded Asian Salad with Kale, Snow Peas & Toasted Almonds
A salad that is perfect for Winter to show my sympathy for my snowed in friends on the East Coast….
Our last Winter in Connecticut was a lot like the one my East Coast friends are having right now.
So much snow. It never melts and you are running out of places to shovel it.
I feel for you guys. I really do.
In this salad shredded kale, snow peas, cabbage and carrots are topped with edamame and toasted almonds, plus a orange ginger miso dressing. It is perfect for Winter because it doesn’t have ingredients that are hard to find in cold places, but it also has a sunny Asian spin on it. Dress and toss your salad just a few minutes before eating to let it wilt the kale just a bit.
Hopefully this salad can help you think warm thoughts. It’s almost Spring!
Shredded Asian Salad with Kale, Snow Peas & Toasted Almonds
Shredded Asian Salad Ingredients:
- Shredded:
- cabbage (4 cups)
- kale (4 cups)
- carrots (2 cups)
- snow peas (2 cups)
- 1 cup Sliced Toasted almonds
- 1 cup Blanched edamame
- 1/4 thinly spiced Red onion
- 1/4 cup toasted Sesame seeds
Directions: Combine in a large salad bowl and toss with dressing (not necessarily all of it).
Orange Ginger Miso Dressing Ingredients:
- juice of one fresh orange
- 1/4 cup honey
- 1 Tbsp plus 1 tsp mild yellow miso
- 3, 1 inch pieces peeled fresh ginger
- 1 garlic clove
- 1/2 cup rice wine vinegar
- 1 tsp sambal oelek
- 1/4 cup sesame oil
Directions: Combine everything but sesame oil in a food processor, and slowly drizzle in sesame oil. Refrigerate.

this is the kind of salad that has so many yummy components that i don’t even need dressing, but the one you’ve concocted sounds too delicious to skip!
