Easy Pineapple Salsa with Charred Jalapeño

This might be the easiest recipe I’ve posted on here, but it might also be the most flavorful.

Fresh pineapple, lime juice, a charred jalapeño… they all come together in a really zesty summer condiment perfect for tacos, rice bowls, on top of fish or just for dipping tortilla chips.

Easy Pineapple Salsa with Charred Jalapeño

Ingredients
  1. 2 cups chopped ripe, fresh pineapple (try to keep as much juice as possible while chopping)
  2. juice of one small lime
  3. 1 large jalapeno, charred (see notes) and finely chopped, using seeds if you want a more spicy salsa
  4. kosher salt to taste
  5. 1/4 cup finely chopped red onion
  6. optional: chopped fresh cilantro, chopped green onions
Instructions
  1. Combine ingredients in a bowl and use right away on tacos, rice bowls, over fish etc.
Notes
  1. To char jalapeno, just let it sit on the open flame of a gas stovetop for a few minutes on each side (keeping a close eye on it) until it gets nice and charred, but not super burnt and still retains its firmness. You don't want it to get floppy, and you still want a bright green flesh inside. Alternately, you can put the jalapeno under your broiler for a few minutes too.
