Superfood Cacao Granola with Flaky Salt

We just got back from a long weekend up North in Ojai. We camped, played a lot of disc golf and watched the lunar eclipse/blood moon on our last night. California is so beautiful and green right now because of all the rain we got last week, and the weather was mid seventies and perfect. It was epic! 

With the rain last week I had a lot of time to work on recipes for a few of my clients. Navitas had sent me some of their new products like their Essential Superfood Blend with Cacao and Greens which I have been using in smoothies and experimenting with baked goods. I like it a lot in this granola because it adds an awesome chocolate flavor and is full of plant protein and other superfoods like goji, macu, camu camu, wheatgrass and spirulina.  You can buy it on Amazon and I have also seen it for sale at Sprouts. 

I’ve been meaning to post the recipe for a few days but I have been so busy with planning for this trip, and getting a lot of other recipes out for some of my new clients (this recipe also involves Popcorners which are some of my other new clients). So here it is finally! The granola is made mostly of nuts and dried fruit, with no oats involved. It stores really well in the fridge and it tastes awesome with just a bit of plain greek yogurt and bananas.

Superfood Cacao Granola with Flaky Salt

Ingredients
  • 3 Tbsp melted coconut oil
  • 2 Tbsp Navitas Essential Superfood Blend- Cacao and Greens
  • 2 Tbsp dutch processed cocoa
  • 2 Tbsp honey or maple syrup
  • 1/4 tsp kosher salt
  • 1/4 cup each of the following: pepitas, slivered almonds, whole almonds, cashews, raisins, hemp hearts
  • 2 cups Kettlecorn Popcorners, quickly crushed with your hands
  • pinch of flaky salt (like Maldon) to sprinkle on top
Instructions
  1. Combine coconut oil, superfood blender, cocoa, honey or maple syrup and pinch of salt in a large bowl. Whisk together until combined.

     

  2. Add remaining ingredients (besides the flakey salt) and combine well. Spread evenly on a parchment lined baking sheet. Sprinkle with flaky salt and set in the fridge for 1 hour.

     

  3. Break up granola into desired sizes and store in airtight container for up to a week in the fridge. This granola is best right out of the fridge and kept at a cool temperature.
