Easy Smooth Tzaziki

Not into that chunky tzaziki.

Last weekend we went camping up North in Morro Bay at a campground called Cerro Alto, which doesn’t have anything to do with Tzaziki but it is still worth mentioning because it was so beautiful and I would like for you to see the pictures.

Take a look and then we can talk about tzaziki, and how it is better when it’s smooth. And easy.

Wasn’t that worth it?



Soooo, smooth tzaziki…

Much better than than the chunky kind. This version is a recipe that I have made maybe hundreds of times. Miles loves it.

Using a microplane, grate in garlic and cucumber and add just a touch of olive oil. Add chopped fresh dill and parsley.

Put it on everything. It loves to be on chicken especially.

Easy Smooth Tzaziki

Ingredients:

  • 1 cup plain greek yogurt
  • 6 inch piece of english cucumber, skin on
  • 1 clove garlic
  • 1 tsp olive oil
  • 1 Tbsp fresh dill
  • 1 Tbsp fresh parsley
  • 1/4 tsp kosher salt

directions:

  1. In a medium bowl, add yogurt and microplane in garlic and cucumber. Mix together.
  2. Add olive oil and mix in with a whisk.
  3. Add herbs and salt. Whisk together to combine.
  4. Let sit, covered in the fridge for at least one hour to let flavors meld together.
  5. Enjoy on chicken, or salad or just as a dip for crudités.
