Chicken Sausage Skillet with Garlicky Spinach and Mushrooms

Since I started working as a chef I want less and less to cook when I get home. But what I want to do even less and less is dishes.

When I get home from a day of cooking I usually take Hunter for a quick walk to check the surf, go surf if there are waves, and crack a beer if there aren’t. I check the price on plane tickets for going home this Thanksgiving, and put away laundry that was folded last week, and then I think about what I’m going to make for dinner.

The less time it takes to cook, the better. Same with dishes. I’m not trying to do a lot of those. I’m sure you’re in the same boat.

This is a two pot wonder (I’m always skeptical of those recipes that claim you can throw the pasta and the veggies into the same pot and they all cook in the same water). I think you’ll enjoy the taste and the simplicity.

Chicken Sausage Skillet with Garlicky Spinach and Mushrooms

Ingredients
  1. 3 cups uncooked pasta (I used whole wheat rotini)
  2. EVOO
  3. 5 cloves garlic, chopped fine
  4. 1 pound crimini mushrooms cut in half or quarters
  5. 4 chicken sausages (I used the precooked Aidells brand) cut into 1-2 inch pieces
  6. 6 cups baby spinach
  7. 1 cup grated parmesan cheese
  8. fresh ground black pepper and kosher salt to taste
Instructions
  1. Start cooking pasta according to directions.
  2. While pasta cooks, heat a large skillet over low heat and add enough extra virgin olive oil to coat the bottom.
  3. Chop garlic and saute over low heat, stirring constantly so not to burn.
  4. Add mushrooms and cook over low-medium heat until soft. If pan gets too dry add a little water from the cooking pasta. Season with a sprinkle of salt and pepper. Stir often until mushrooms cook, about 10 minutes.
  5. Once mushrooms are cooked, add chicken sausage and cook, stirring often until sausage is browned a bit. Add a little pasta water if necessary to keep pan from getting too dry.
  6. Add spinach and about 1/2 cup of pasta water (use less if there's already a bit in the pan) and cook spinach, stirring constantly until just wilted.
  7. Add cooked pasta to pan and combine ingredients. Season with salt and pepper if necessary and sprinkle with parmesan cheese. Enjoy!
