Super Simple Spicy Brown Rice and Bean Bowls
Here’s a super simple recipe for you guys that I know you’ll love. The rice has so much flavor from the addition of a few spices, and richness from a little butter thrown in there, (you could also use coconut oil which is also good). I make this recipe almost once a week because it is a great base for leftovers (or another dish you could top with this salad). If you have leftover grilled chicken or steak, pulled pork, sausages, you name it… it would taste good on this bowl as a complete meal.
I also added some avocado, fresh lime juice and cilantro plus some shredded red cabbage and iceburg lettuce. I’ll just include the recipe for the spicy brown rice below since it is really up to you to customize it.

- 2 cups uncooked brown rice cooked (I use my rice cooker)
- 1 can black beans drained and rinsed
- 2 Tbsp unsalted butter
- 1/2 tsp ground turmeric
- 1/2 tsp garlic powder
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp red pepper flakes
- 1/4 tsp kosher salt more to taste

Cook rice, and when it is still warm add the butter.

When butter has melted, add the spices and stir gently to combine fully.

Add black beans into rice and combine. Use as the base for bowls and top with whatever you choose.

I loved this recipe!! I have been looking for a good rice and bean recipe that has some flavor and this one is great. We added chorizo to make it more of a meal (for those who think meat is a necessity), but it is great as a side.
