The Easiest Chicken Pho
We got home late from Yosemite on Sunday night and stopped to grab some pho from our favorite place on the way. I’ve made it a million times before, and I like it a lot when its vegetarian but I figured a good easy recipe for some chicken pho was in order. I bought some good chicken stock at Trader Joe’s and simmered it with fresh ginger, star anise, cloves, garlic and corriander for about an hour. It came out fantastic. What else you choose to put in the bowl is up to you but I love a good amount of fresh herbs like cilantro and green onions.

Serves 3
Ingredients
- For Broth
- 1 Tbsp coconut oil
- 4 cups good organic chicken stock
- 3 inch knob fresh ginger, sliced into quarter inch slices
- 2 cloves garlic, smashed
- 5 cloves
- 2 star anise pods
- 1 tsp whole coriander, or 1/4 cup cilantro stems
- kosher salt to taste
- 1-2 tsp brown sugar to taste
- To Assemble
- Cooked rice noodles
- shredded chicken (from a rotisserie works great)
- baby bok choy leaves
- chopped green onions
- super thin sliced white onion
- chopped cilantro
- lime wedges to garnish
- shiracha to garnish
Instructions
- In a medium stock pot heat coconut oil over medium heat. Add ginger, garlic, garlic, cloves, star anise and coriander. Cook stirring frequently for one minute. Add stock and let simmer for one hour and up to 3 hours with the top on.
- Strain, and return to the pot to keep warm. Add salt and sugar to taste. Pour over arranged bowls to cook and heat up veggies, noodles and chicken. Garnish and enjoy immediately.
