Tomato Salad with Feta and Sumac

I’m having a killer tomato crop this summer! I think it is because of my compost and the hot weather we’ve been getting in Southern California. I made some salsa yesterday, I’ve given a few away, and made this salad tonight. 

Fresh herbs from my garden, crumbly feta and a good sprinkle of lemony-sour sumac takes the place of salt. All finished with a drizzle of good quality olive oil and this salad is on your table in about 10 minutes.

Tomato Salad with Feta and Sumac

Ingredients
  1. 4 large tomatoes, sliced
  2. 1/4 cup thinly slivered red onion
  3. 2 Tbsp fresh lemon juice
  4. 2 tsp honey
  5. 2 tsp olive oil
  6. 1/2 cup crumbled feta
  7. fresh parsley, chives, dill or mint to garnish
  8. more olive oil to drizzle on top
  9. ground sumac to sprinkle on top
Instructions
  1. In a small bowl combine the red onion with the lemon juice, olive oil and honey. Stir to combine and let it sit while you chop the tomatoes.
  2. Arrange the tomatoes on a platter and arrange onions on top.
  3. Sprinkle feta and herbs on top and drizzle with olive oil.
  4. Sprinkle with sumac according to taste.
  5. Enjoy right away since tomatoes will get mealy in the fridge.
