Vegan Green Goddess Dressing

This is a super easy, super healthy dressing or dip that will brighten literally anything you put it on with a nice pop of fresh herbs. You can use whatever herbs you have on hand but the parsley and chives are essential. Because of the decent amount of acid in this it should stay green in your fridge for a few days and not oxidize if you keep it covered.

Vegan Green Goddess Dressing

Ingredients
  • 1 ripe avocado, pitted and removed from skin
  • 1 clove garlic, peeled
  • 1/3 cup fresh lemon juice (about one lemon)
  • 2 Tbsp olive oil
  • 1/4 cup cider vinegar
  • 1/4 cup chopped fresh parsley
  • 2 trimmed and chopped green onions
  • 1/2 tsp kosher salt
  • 1/4 cup chopped chives
  • various other herbs ie mint, tarragon, dill
Instructions
  1. In a high powered blender or food processor combine avocado, garlic, lemon, olive oil, vinegar, parsley green onions and salt. Blend until smooth and herbs are finely chopped and incorporated. 


  2. Add chives and other herbs of choice to blender, and blend again quickly until incorporated. Taste and season with salt if necessary, adjust with more lemon or vinegar if the dressing is too thick. 


Recipe Notes

To use this is as a dip reduce the amount of vinegar, and to make it non-vegan add an anchovy in the first step.
