2 Ingredient Coconut Syrup for Coffee
I always have two cups of coffee a day.
I need to have that first cup of coffee every morning (has to be hot!), followed by the second cup somewhere around eleven, which is usually an iced coffee. I never drink my coffee black and I always sweeten it.
Am I a wimp? Probably!
I really like to sweeten my coffee with a little bit of this coconut syrup. It has a slight nutty taste, and a mellow sweetness kind of like caramel or brown sugar with a note of coconut (not the fake Malibu coconut flavor) which I find really compliments the flavor of the coffee instead of hiding it.
This syrup only takes 2 ingredients to make and it really goes a long way. Not to mention it is perfect in iced coffee because it is already liquid and doesn’t give you any chunks on the bottom.

- 1.5 cups coconut sugar
- 2 cups coconut water

Combine coconut sugar and coconut water in a small saucepan and heat to a boil over medium-high heat, stirring contantly.

Reduce heat and let simmer 1-2 minutes. Remove from heat and let cool.

Put in storage container and cover. Will stay good in the fridge for a week or so. Use in coffee or iced coffee for a touch of sweetness, nuttiness and a mild coconut flavor.
