Greek Cucumber Salsa

Easy and fresh, this Greek cucumber salsa would be perfect with warm pita bread or chips. It would be good as a side or even mixed with some quinoa for a quick salad. 

I’ve used a bit of fresh parsley and mint which really make the salad nice and herbaceous. I’ve also added some oregano and chives because I have those in my garden but you can leave those out if you don’t have them. I have used what seems like ten different lemon juicers and they all end up breaking on me. This one from Zulay has been my favorite so far!

Greek Cucumber Salsa

Ingredients
  • 1 18 inch english cucumber, seeded and chopped into 1/4 inch pieces
  • 1/4 cup finely chopped red onion
  • 1/3 cup crumbled feta
  • 1/3 cup cup finely chopped pitted kalamata olivs
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp chopped fresh mint
  • 1 Tbsp chopped fresh oregano (optional)
  • 2 Tbsp chopped fresh chives (optional)
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp olive oil
  • pinch kosher salt (if necessary)
Instructions
  1. Combine all the ingredients in a medium bowl and stir gently together. Serve with warm pitas or chips, or as a side. 

  2. Note: This can be prepared a day in advance but dress with olive oil and lemon juice at the last minute since the cucumbers will want to release their moisture when they are salted or when they have contact with the lemon juice.
