Lemony Quinoa with Dill, Cucumber and Feta
Spring has arrived in the OC, meaning the temps are in the mid-70’s again.
Wait, they always are…
DON’T BE HATIN’, HATERS.

The best thing about living in a location that is warm all year round is that we get a lot of visitors!
Lentils are a great source of protein (12 grams per 1/4 cup) and they are really cheap to buy at the store. So you meat lovers, don’t come running to me with the “how will I ever get my protein?!” question. This soup is spicy, flavorful and filling and you definitely won’t think “where’s the meat?”
Perfect lunch, and perfect alternative to a cold salad.
Warm, meaty mushroom flavors, and gooey poached egg with a hint of parmesan.
Enough said.
Peanut Butter and Chocolate is a cliche pair for a reason. It is the most delicious combination in the world.
If you don’t agree, we can still be friends but don’t expect us to have anything in common.
Over a plate of tacos last week, our friend Casey talked us into doing a juice cleanse. He has done a few himself, and we’ve heard him rave about it before but never considered doing it. At that point we had just been having green smoothies, but they were making me gag every time I drank one. We switched from green smoothies, which we made with yogurt and in the blender, to juicing fruits and veggies in a juicer. We aimed to juice for 3 meals a day, for a 2 weeks.
As mentioned in my previous post, I have never been one for fad diets but I really wanted to see the effects of this one.
As an avid enjoyer of foods, it can be torture to be drinking every meal in juice form, (although I have been enjoying it more than I thought). This soup is basically a big hot pot full of all the veggies that we have been juicing (minus the garlic).
So like many of you, Miles and I were feeling a little mmm.. how you say… heavy? after the holidays and we decided to do a little “cleanse” of our own. In my opinion that if you exercise daily, and eat right proportions that there’s no need to do diets or “cleanses”. If you’re happy and able to move around the way you want, then I think its all good (isn’t that what life is about? who has time to watch every little thing that goes in their mouth?).
Sometimes lettuce can just get in the way of what a salad is really all about… the cheese, the dressing and the croutons. Just kidding! THE VEGGIES! I love a big bowl of grated carrots (so easy to eat vs big chunks), cucumber, tomatoes and onion. Who needs that pesky lettuce!
After yesterday’s Neighborhood Friendsgiving (and the customary 2nd dinner last night) I was left with half of a 24 pound turkey. I’ve been trying to think of recipes that will incorporate all that delicious turkey, and none of them were appealing to me after a whole day of eating (and drinking) too much. Turkey soup and hot turkey sandwiches just don’t sound good when you’re already turkey-ed out and feeling fat. I was racking my brain for a lighter alternative to the traditional leftover turkey recipes, and one that didn’t incorporate stuffing or cranberry sauce (2nd dinner is for that). I think you’ll find that your belly and waistline will thank you when you give this recipe a try.
